HOW EASY? Super Easy

1 iceberg lettuce, finely shredded
3 smoked chicken breast fillets, thinly sliced
2 mangos, peeled, cut into thin wedges
1 red onion, cut into thin wedges
1 bunch fresh mint, leaves torn or shredded
½ cup (130g) natural yoghurt
2 tablespoons chopped fresh coriander, plus extra to serve
1 tablespoons sweet chilli sauce
2 tablespoons fresh lime juice
Combine the lettuce, chicken, mango, onion and mint in a large bowl.
Combine the yoghurt, coriander, chilli sauce and lime juice.
Divide the salad among serving bowls. Drizzle with a little dressing and scatter over extra coriander leaves. Serve immediately with extra dressing on the side.
