This easy gathering of greens takes zing from lemon, smoothness from sour cream and mayo, and a slight but from blue cheese and mustard. Recipe by Cynthia Black
65g (1/4 cup) sour cream
75g creamy blue cheese
2 tablespoons whole egg mayonnaise
1 tablespoon fresh lemon juice
1 teaspoon Dijon mustard
80g baby rocket leaves
80g baby spinach leaves
2 baby endive lettuces, leaves separated , washed and dried.
Place sour cream, blue cheese, mayonnaise, lemon juice and mustard in the bowl of a food processor and process until just smooth. Season with pepper.
Place the rocket, spinach, endive and sour cream mixtures in a large bowl and gently toss until just combined. Serve.
